Oleic acid, (C₁₇H₃₃COOH), is an unsaturated carboxylic acid used as a lubricating oils and varnishes. Triolein, its ester with glycerol is present in many natural oils and fats, helping to keep them liquid at room temperature. Melting point 16°C, boiling point 286°C.
